Cauliflower Tater Tots
This recipe from the blog Empowered Sustenance features cauliflower as the hero and includes coconut flour. In this recipe you need to use this exact amount of coconut flour because it is very effective in how it absorbs moisture. I don’t know what amount you would need if you used conventional flour? While coconut flour is expensive, you use so little of it, it is worth the investment for food variety! I’m big on choosing nutrient dense foods so I like the idea of coconut flour for this reason too.
The other good thing is it shares a recipe for a dipping sauce made with avocado and lime.

Jamie Oliver’s Butternut pumpkin penne, mint & avocado chopped salad
This recipe from Jamie Oliver is pretty easy. If you do pasta (gluten free/ zucchini spiralised), and can tolerate some chickpeas you’ll find this a super easy recipe for a Meatless Monday. PLUS the avocado salad would be perfect on its own too.

Ricotta and Cauliflower Gnocchi
This recipe featured on the Divalicious blog is perfect if you want a gluten free grain free gnocchi. If you can have dairy and eggs you’ll love it! It’s so easy and simple! It also uses coconut flour so if you’re going to try the Cauliflower Tater Tots you can use your coconut flour for this one too!

In Season During Spring
When you purchase fruit and vegetables in season not only will they be beautiful and delicious, they will also be much cheaper too. Keep this list handy so you know the best time to buy and eat your fruit and vegetables!
Fruit
