Meatless Monday – What’s for Dinner in Summer

These Zucchini Fritters (via 4 Ingredients) are great for a quick dinner. Make extras and you have yummy lunchbox fillers!  I’ve included a photo of my attempt – but I added in a few more things – feta, pine nuts and parsley! I served it with two salads – a greek salad and a cucumber salad (with sunflower seeds, mung beans, and parsley).

Asparagus Quiche

This is a super easy recipe and one of my favourites for asparagus. Asparagus are packed with antioxidants and nutrients, including fibre, folate, vitamins A, C, E and K, as well as chromium (enhances the ability of insulin to transport glucose from the bloodstream into cells), and glutathione.

Jamie Oliver’s Eggplant Lasagne

I LOVE eggplant, so I especially love this take on the traditional lasagne  – perfect for gluten free/ grain free eating! This one is a Jamie Oliver recipe.  You could easily make this in  a meat version if you have bolognese sauce in the freezer.

Nectarines and Haloumi with Walnut Pesto

This recipe from MiNDFOOD is fantastic – so easy and simple.  I love Haloumi and this is such a great way to show off nectarines in season! The combination with walnut pesto adds another great element of protein and good fats too.   This is a entree size so just add more vegetables to ‘stretch’ it into a main meal size.

In Season During Summer

When you purchase fruit and vegetables in season not only will they be beautiful and delicious, they will also be much cheaper too. Keep this list handy so you know the best time to buy and eat your fruit and vegetables!

Fruit

apricots, bananas, berries (blackberries, blueberries, raspberries, strawberries), cherries, figs, grapes, lemons, limes, lychees, mangoes, melons, nectarines, oranges, passionfruit, peaches, pears, pineapple, plums, watermelon

 

Vegetables
