Snacks for Anytime of Day

With back to school fast approaching I’m sharing a few recipe collections over the next few blog posts. The few recipes I’ve complied make great breakfast OR snack options for anytime of day.  As some have nuts so if you need to avoid these for school they will be perfect to have at breakfast – with that extra bit of protein to help with concentration and blood sugar dips.

Apple Banana Cookies

This recipe from Civilised Caveman Cooking looks fantastic and a great easy breakfast if you make them ahead.  Chances are you will have the ingredients on hand – or if not they are easy to get hold of:

  • apple, banana, almonds, macadamia nuts, shredded coconut (get organic sulphur dioxide free), cinnamon, vanilla, coconut oil (or butter) and eggs.

I like that it has no ‘added’ sugars so in my opinion that makes it perfect for a breakfast food.  It only has the natural sugars you find in fruit!  Check out the recipe here: http://civilizedcavemancooking.com/recipes/desserts/apple-banana-cookies/ 

4 Ingredient Quiche – via Wholefood Simply

WFS - 4 ing quicheThe food photography on the Wholefood Simply blog is always so beautiful.  This really has to be one of the prettiest quiche’s I’ve seen!  How simple is this no pastry quiche – just eggs, olives, sundried tomatoes and parsley!

If you make it in a rectangular dish and cut into squares you’ve got snack size for any time.  Alternatively you could make these in muffin trays too – just be sure to grease them well!

Cinnamon Cake Bars

This cake is higher in protein because it has an egg, protein powder, almond milk (replace with whatever type you use) and greek yoghurt.  The recipe uses oat flour and buckwheat flour too so it is nut free – as long as you swap the milk! The recipe calls for a small amount of sugar – 1/4 cup of “turbinado sugar” – but just use rapadura or panela instead (see this blog post from Jo at Quirky Cooking to discover more about your sugars.  Thanks Jo!).
