Healthy coconut berry ice cream

coconut berry icecreamAs we head into summer I wanted to share with you this easy peasy ice cream recipe so you can make yummy ice cream any time!!

It has only three ingredients – and even then you only need two of them!  It is a great recipe for you to add your own flavours. The trick is having the bits frozen and in the freezer READY to go.  This recipe was completely inspired by the super clever Quirky Cooking’s Joanna Whitton and her post – the Ice Cream Menu Plan! Thanks Jo!!

Home Made “Ice Cream”

This quantity makes about 5-6 scoops:

6 cubes of frozen coconut cream

6 ice cubes of water (optional – you could just do all coconut cream if you wanted!)

1-2 cups of frozen organic berries (get organic as pesticide levels are high in berries)

I put it all into into a food processor and blitz till it looks like ice and then blitz some more.  (It takes about 30 seconds in the thermomix).

OTHER BITS: You could add preservative free coconut too.

This isn’t a super sweet ice cream because I feel the fruit has enough natural sugar in it.  If you want it sweeter though add in some other fruit to make it more nutrient dense!  I don’t like it too sweet as it makes my teeth hurt 🙁

What I love most about making my own “ice cream” is I know what’s in it!  

As the Additive Alert Community talks presenter I talk a lot about questionable additives you’ll find in ice cream: Annatto 160b, a range of artificial colours, Carrageenan 407 to name a few.  NONE of these are good for you.
