Banana Muesli Rounds

These are a very simple snack that you can freeze.  If you can eat oats they are worth a go!

I tend to use a natural organic muesli mix because it is ready to go complete with preservative free fruit, nuts, seeds and coconut. Of course you can choose to make it with any muesli mix that suits you (e.g. nut free).

If you want though you can use plain oats – just mix in some sunflower seeds etc and sulphur free dried fruit and coconut too!  These really taste like health biscuits – so not sweet and crunchy at all.  The great thing is you can add in any flavours you DO like with spices.

Ingredients

  • 1 – 1 ½ bananas, mashed
  • 2 cups natural organic muesli

Add Optional Extras  if you like:

  • 1 teaspoon cinnamon, ginger – any flavours you love!
  • Extra seeds – e.g. chia seeds/sesame seeds or coconut etc!
  • honey/ maple syrup/ oil if you prefer

Method

  1. Preheat oven to 180 degrees Celsius.  Line baking tray with baking paper
  2. Mash banana.
  3. Add muesli/oats – Mix.
  4. Add spices, oil/ honey/ maple syrup if using and mix well.  The mixture should be pretty mushy – but not too sloppy so add extra Oats/ Muesli if needed – especially if you’re adding in any honey/ maple syrup.  You can blitz and mix this in a food processor if you really want to.
  5. Take 2 tablespoons of the mixture  (ice cream scoop size) and shape into rounds on tray.
  6. Bake for 15- 20 minutes or until the cookies are cooked and slightly golden.
