Meal Planning: What’s for Dinner on Meatless Monday in September

September 1, 2014

Meatless monday SeptemberRegardless of when you plan, on the first Monday of every month I’ll be sharing what’s in season as well as a few recipes to help get you inspired to add a Meatless Monday into your life every week!

One thing that I always recommend is to have vegetarian meals at least once a week to make sure you’re getting in loads of antioxidants and fibre to keep you regular!

Depending on your Meal Planning Personality you’ll plan your meals at different times – either a month or a week in advance or on the day.  (Click to take the Quiz to Uncover your Meal Planning Personality).

Meatless Monday Recipes

This month’s instalment of Meatless Monday Recipes include:

Vegetarian Mushroom Bolognese sauce

15 minute mushroom stroganoff

Try and be particular about the stock you use – avoid flavour enhanced ones, and go for full fat sour cream!

Spinach rice pie

Perfect revamp for cooked rice!

Grilled vegetable and haloumi bruschetta

You can ignore the bread to make it gluten and grain free – just stack the items on top of the grilled vegetables!  Cook extra and revamp it into the Vegetable slice / muffins below.

Vegetable Slice/ Muffins

Be sure to use vegetables you’ve cooked from the night before (eg roasted) so it is even quicker and easier!

English Onion & Leek Soup – Jamie at Home
