What’s for Dinner: Spinach and Feta Pie

This is such a quick dish to prepare.  Even though it takes a bit of time to cook, it is so easy because you just put it in the oven – check it once then walk away!!!!

Don’t forget to multi-task your meals and ROAST some vegetables for tomorrow night’s dinner!!  You could roast vegetables to toss through pasta, put on a pizza, use in a lasagne, make a salad!!  Heaps of options for you to make awesome revamps (click here for ideas)!

Ingredients
  • BUTTER PUFF PASTRY 2 sheets (or home made pastry!)
  • FROZEN SPINACH (defrosted) or ½-1 bunch fresh spinach, chopped
  • GRATED CHEESE 125g
  • FETA 250g, crumbled
  • ONION 1, diced - or use shallots/ leeks, sliced
  • EGGS 2-4 (depends on how many you have - this is a very forgiving recipe!)
Instructions
  1. Put oven on at 230C
  2. Put pastry sheet onto bench to defrost (or make your pastry!)
  3. Grease pie dish with butter (add a little flour to stop puff pastry sticking).
  4. Put pastry into pie dish
  5. Mix spinach, grated cheese and crumble feta
  6. Put filling into pie
  7. Crack eggs in the bowl, beat lightly then pour over spinach. Add second sheet of pastry. Brush with leftover egg from bowl.
  8. Cook in a hot oven for 15 min at 230C (bottom heat if you can), then 150-160C for 30 min (fan force).
