What’s for Dinner: Zucchini Slice

This recipe is so easy!  It is definately one I do on a regular basis.  It is a great to have for lunch, or freeze and take out slices as you need them.


Zucchini Slice

  • ZUCCHINI 2, grated
  • ONION 1, diced
  • BACON 3 rashers, diced (nitrate free)
  • GRATED CHEESE, 1 cup
  • FLOUR, 1 cup (e.g Gluten Free/ Grain Free/ Besan/ Chickpea flour)
  • OIL 2 tablespoons
  • EGGS 5
  • salt, pepper, herbs


  1. Grease baking dish
  2. Put items into bowl
  3. Mix ingredients together
  4. Pour into baking dish
  5. Cook for 30-40 min at 180C!
