What’s for Dinner: Cherry Tomato and Feta Frittata

This recipe is so quick and easy to make on those nights you need good food FAST!

Cherry Tomato and Feta Frittata

  • 6 EGGS
  • 2-3 tablespoons chopped fresh HERBS
  • pinch SALT and PEPPER
  • 125g FETA
  • 4 GREEN SHALLOTS, sliced thickly (or 1 ONION, chopped)
  • 1-2 cloves GARLIC, chopped
  • 250g cherry tomatoes, halved
  • Serve with Salad greens
  1. In a bowl place eggs, herbs, salt, pepper and feta. Mix ingredients well to combine.
  2. Over a medium heat, add oil and cook shallots/ onion and clove of garlic in a 20cm fry pan. Cook until lightly golden (about 2 minutes).
  3. Preheat your oven grill.
  4. Stir in tomatoes then pour egg mixture into pan over the filling. Cook until set (5-8 minutes).
  5. Place pan under preheated grill until frittata is set and golden (about 1-2 minutes)
  6. Serve with a salad.
