Freezer Meals: The secret to avoiding takeaways

September 26, 2012

When I cook I can’t help but make large batches!  This is actually a great habit to get into as it means I can freeze extras – perfect for those nights when I couldn’t be bothered to cook!

Having meals in the freezer that give me a head start, means I can just thaw, heat, and serve, or use them as the base for another dish.  This is one of the easiest ways to enjoy “fast” food at home!

I only have a few dishes that I make in big batches and freeze.  They are:

  • dahl curry
  • soup, and
  • my absolute favourite – Bolognese sauce!

When I make a batch I make a BATCH, for example when it comes to bolognese sauce I’m seriously talking a few kilos (about 4 pounds) of lean mince!  Once I pull it out of the freezer, it works brilliantly as a super quick meal of spaghetti or lasagna (make white sauce or use ricotta instead)  or burritos/ tacos (just add canned beans!).

What are your favourite cook ahead meals?
